INNOVATIVE EXTRACTION TECHNOLOGY FOR OBTAINING A BIOACTIVE SUPPLEMENT FROM POMEGRANATE PEEL
Abstract
This study investigates the technology for obtaining a bioactive supplement from pomegranate peel (Punica granatum L.), a widely cultivated fruit in the climatic conditions of Uzbekistan. To maximize the extraction of polyphenols, ellagic acid, tannins, and other bioactive compounds, traditional hydroalcoholic extraction, ultrasonic extraction (UAE), and microwave-assisted extraction (MAE) were compared. The antioxidant activity of the extracts was evaluated using DPPH, FRAP, and ABTS assays. Drying methods – spray drying and freeze-drying – were assessed for their effectiveness in preserving bioactivity. Overall, the findings have practical significance for optimizing the production of high-value bioactive supplements derived from pomegranate peel.
